A week or so ago cooler temperatures brought out the bean pot! Pinto beans of course! My wifes committment to make the cornbread sealed the deal. Not counting the overnight soak its a 6-8 hour process ( depending on just how patient you are). No worries though if you're a little early- they are even better the second day! And we had fresh roasted Hatch green chili's in the freezer! The secret of course is the pot, its been building the seasoning for over twenty years! Wish i could be around to taste them twenty years from now!
Of course by then there may only be "plant based pork" for the seasoning!😕
Old Flint's boat is fine and she's called the Miss-Inclined
and there's no home port painted on her stern
and they say she's like a ghost up and down that Texas coast
but you saw him didn't you Laverne ? Guy Clark
I'm not much of a coast-beaches guy but Renee' and Hallie are! And there was no way I was going to pass up a trip with them there over Hallies Christmas break! The fresh seafood is fantastic and even better is hearing their laughter and seeing their smiles! My idea of the beach is picture number TWO, looking at at it from a comfortable chair, out of the blowing sand, with a good book close at hand! I just keep a sharp eye out for Old Flynn & the Miss Inclined, he's been know to lure beautiful women aboard and sail away!
Renee', Hallie, Bailee, Karen, and I headed to San Antonio on New Years Eve with a two-fold goal- tamales from Reubens and chicken from Pollo Asado al Norteno! To be honest B &H don't eat the chicken ( just chic-fil-a for them😩) but they were up for tamales AND Pollo Asado also has killer grilled burgers! Someday i'll eat one but stuffed with fresh tamales and that otherworldly chicken a couple of bites is all I've managed so far. The tamale eating is pretty ritualized- on either the hood of the car or inside it you open a dozen, let the aroma fill the air and then devour them! And sometimes they are so HOT you can barely unwrap them!
because there are tortillas, grilled onions & jalapeños, rice, beans, and of course the famous green sauce in addition to the chicken! it goes a little slower!
